
Papaya candy is a typical Cape Verde dessert. One of the many riches of the African continent is gastronomy, largely unknown. To make it known, the NGO Habitfrica organized over the past year the Africa campaign in the kitchen, in which several African cooks and chefs brought the aromas of their land and their culinary traditions of deep roots, with the idea of bringing us closer succulent delicacies of the African continent.
You will need to:- 1 kg of ripe papaya
- 1/2 kg of sugar
- 4 cloves
- 1 cinnamon stick
- 4 cups of water
- Lemon rind
The papaya is peeled, the seeds are removed and cut into fat strips or pieces of about three centimeters.
2Water and sugar are mixed in a large bowl. Papaya, cinnamon sticks, lemon rind and cloves are added.
3Let it boil over medium heat without stirring. It is cooked until it becomes crystalline and the sugar becomes thick in the form of syrup.
4Boil for 15 or 20 minutes and turn off the heat, then let it cool to room temperature.
5It is placed in a jar and stored in the fridge. It is served as a dessert with soft cheese.
